Two stages are generally more expensive and geared more toward professional use. You can do pretty much anything with a single stage as you can a two stage. The two stage pumps up quicker and usually has a higher ultimate pressure. If you're not going to make a living with it, a single stage will suffice. The CFM rating is what's important. The two stage will be the better of the two but carries a more expensive price tag.
