stall convertor or not

hello I am going to run my 1968 dart with 4.10 gear as I plan on driving around town short cruises, I am using a 2005 5.7 hemi and 727 trans, these engines run good and stroung on higher rpms but seem weak on take off, I have only driven late model cars with high gears with these engines. Since I am running 4.10 gears I wonder if stock 1800 stall convertor would be enough to make it jump off the starting line well. I thought of using a 2500 to 3000 stall but sure not looking for a rubber burning machine!! I have used the mickey thompson street drags and I plan on filling the wheel well up with the biggest I can safely fit inside it. I just looking to go from 0 to 80 mostly (only in deserted areas) or test and tune nights at local drag strip of course to many people die with street racing at high speeds :sad: ! So whats your opinions?
