Work the grinder back and forth like laying on a coat of paint.
This will take a little at a time off and minimize the heat build up.

as said but use the green disc (36 grit) on a angle grinder or if you are very careful you can use a grinder with a grinding disc and just take off the bulk of it, then come back and use the green disc to level it...

as said move around alot and dont be afraid to use water to cool an area... you can always use metal wash or a wire wheel to get any surface rust...
