1971 demon hood question
The locations for the rivetted plates on the hood are dictated by the bracing areas for the pins themselves.
They are super easy to locate on the car, because they have depressions for the pins and for the cotter key lanyard retaining screw, even.

As far as depth adjustment goes, I would suggest removing the grille to make the adjustments checked with the hood shut. Give yourself a little room on the front of the plate, as the hood will want to swing back a little and you will lose some clearance between the top of the pin and the leading edge of the hole, in the plate as it opens.
Don't let the pins scrub on the plates. Give them a little room in height. They will spring down a bit against the plates, which keeps them from making too much noise. The hood latch should still hold it in place, unless you're working on a T/A fender tag E body or M code '69 1/2 B body.
