Just installed over center spring, pedal acting funny
The sticking pedal is pretty clearly due to the overcenter springs rubbing against and binding on the pedal lever at the linkage connection. It should not be rubbing; it looks like the upper end (near the steering wheel) is hooked to the wrong point and should be hooked at a point closer to the driver door side of the car.
And, when in the upper end of the pedal travel, the overcenter spring length should very slighty shorten (if it changes at all) as you move the pedal back up through the upper 1" of travel. In that way, it is helping the return spring, not fighting it. I can't tell if that is happening from the video, but can be accomplished by moving the steering wheel end of the spring a bit lower.
I can't tell you if flipping the spring around will do this or not; you should just try it both ways and flipped upside down.
Don't leave it binding like this, because it is probably keeping the clutch lever against the throwout bearing and will wear out that bearing.
