Dyno run/ missing out maybe? Low hp/tq

Hi guys I got a jasper 383 big block with a Holley 750 carb with a weiand high rise dual plane intake/ an long tube headers. I put my car on the dyno and did just one pull. The car when accelerating seems to almost miss out or run a bit rougher from roughly 3,000-5,000 rpms. I don't know if it's from carb adj/ plug and wires/ ign timing I have no clue anyhelp please and thanks. The motor is super clean and runs great besides that and I noticed it accelerating hard on the highway. So it's not only on the dyno run. Ps the numbers where 187 hp at 4300 rpm and 260 torque at 3300 rpm. Thanks guys !!! mopar or no car
