Need advice on body & paint $$$$$

HOW MUCH IS A REASONABLE BODY AND PAINT, WHEN THE CAR IS ALREADY COMPLETELY STRIPPED DOWN FOR YOU

Hi guys, I currently have my 71 Swinger stripped down to bare bones. A well known guy in my area, who is actually a good friend of mine has quoted me a price to do the body and paint. Orginally he said $10,000, at least. Then he had me strip the car myself, remove the vynel top, fenders, windows,....complete stripped.
So now everything is visable, its going to get full factory rear quarters and the rear deck filler panel from AMD. All other panels are rust free but need to be stripped due to the 7 coats of paint on the car.
My buddy said $10,000 is just to straighten, block, assemble & fit, then paint the car. Any other body work he says will be extra. we stripped 1 fender just to make sure of no surprises under the paint on the southern car, its perfect other than a few minor dings.
So at this point he offers to strip both fenders, both doors, and the trunk lid, all inside and out for $1500. This includes stripping to bare metal, welding in all body molding holes, emblem holes, fixing all dents and imperfections, then applying a 2 part apoxy.

I will be buying the rear body panels myself. Whats a fair price to install quarters and deck filler?
After being all stripped to bare metal and in primer, the car will need to be assembled, blocked until its straight as an arrow, straightening the bod lines, then begin to paint inside doors, trunk, hood, engine bay, window channels, door jambs, trunk sills, and whatever else gets done before the body. Then after painting the body he says the car will be wet sanded and buffed to a show quality finish.
Keeping in mind this guy is VERY good at what he dose, been doing it for over 40 years. Every car he's done wins many awards. And most cars he has done cost like $30,000 for body and paint. With that said, I know he is worth every penny he quoted me, BUT.....lol

I have a budget which is quickly getting used up. Once I purchase the panels I need I'm already going to have slightly under the $10,000 as quoted. That's before installing the panels.

Now to get to my questions?.............
I need some input from Canadian members on this please. Only because I think its quite a bit cheaper to get things done in the U.S
What is a reasonable price to pay for a good body and paint ?
What should I be paying once the panels are all stripped and primed, and or new ?
What is a reasonable price to remove the quarters and deck filler and installing new?
