Stock or reduced temp thermostat?

I just ordered up a Lincoln Mark VIII electric fan with Volvo dual speed fan relay for the Warlock. I now need to buy the proper dual thermo sensor to actuate the fans and would like to get feedback on what is the preferred thermostat temp so I can order the right sensor.

Are you guys using the stock 200-ish unit or an aftermarket 180* thermostat?

If it matters any, my motor is a stock 2009 VVT 5.7, the only upgrades at this point would be a kickass exhaust, the equivalent of a cold air intake, and the Diablosport inTune canned tunes. I may swap over the injectors from my 6.1 intake if anyone thinks it would be beneficial...
