Dash tag, radiator support, package tray, fender tag, door sticker, and if you're lucky....motor and transmission. NCDMV Inspectors are usually pretty nice unless you try to pull something on them. They showed up at my house 2 years after I bought an out of state car to look at the VIN. He said it appeared to have been titled thru a title company prior to me getting it. I told him I had no clue (and really didn't) and we were good to go. He hung around and talked old cars a bit, and told me if I ever needed his help to come see him or give him a call. Now he's my go to guy if I think somethings fishy on a car! He helped me get a bonded title for a nice older Dodge motor home from Canada that had no title. Treat him/her right, and they will do the same for you. NC did pass a law a few years ago that says that if they don't get there in 30 days to do your VIN inspection, the DMV has to issue you a title so you can register the car. Good luck.
