You can call them and ask if you can substitute items for a small charge. Like if you choose kit "c" and want higher compression pistons, or if you want a high volume vs standard oil pump, etc.... Ask them how much it will be to substitute those items in the kit with the ones that you prefer....
Start with a kit of your choice, then work from there...
