So dbl checked my piston height to be sure. I get .034" outta the hole. So with the new head gasket I mentioned above being 0.0345" thick, does that essentially put me at zero deck?

No zero deck is top of piston flush with the deck. Looks like you have a small dome on your pistons for open chamber heads? Don't know a lot about 340s. IMO and I know a few that would hit the red X button, best case scenario is .035 - .050 clearance in quench area and use head gasket thickness to get that.
