I'm looking to purchase a good converter while I'm in the process of this swap. Will a 2800-3000 or 3000-3200 be too much for a little daily driven 318 with a TF 727? I have a 750 Edelbrock, Weiand Action+Plus Intake, Exhaust, Mallory Ignition, Electric Pump/Fan, and 3.55 gears. I do plan on adding headers, upgrading the cam (XE268 or XE274 Roller), and changing heads.

Call them and see what they recommend. I have one in my car works great and they are very knowledgeable. They used to re-stall it for free one time if you were not happy with it as long as you didn't change your engine specs, so ask about it.

Until you've completed the engine upgrades, I wouldn't order any high stall converters. The little daily driven 318 will work just fine and dandy with a stock converter even with the Edelbrock, etc. you appear to have on it now. Changing the engine specs with headers, camshaft and head change will alter things. Any performance converter you purchase now for your present setup may be a dog once you've done the upgrades you're planning on.
When you buy your converter buy directly from the company that makes it. I'm not knocking the parts suppliers, but converters are not their main business. The main business of a converter builder is "building converters", not supplying plug wires and the like. Just my opinion and experience.
