Been aging some alkey-hol with white oak chips. Damn. quite smooth and a little complicated. It's amazing what flavors come out of the wood when you start with clear and basic flavorless alcohol. And at 80 proof it really does the trick. Bz Bz Bz zzzz
Start with 150 proof Everclear or vodka and reduce it by half with distilled or filtered water. You get 75 proof grain alcohol. You can buy American oak barrels (1 quart to 55 gallon.) or you can buy Toasted oak chips or spirals. A couple months smooths out the bite of the ever clear and adds flavors. You can put a few drops of glycerin to give it some thickness or "mouth feel" and it will sweeten it up a bit too. Some guys have been adding a vanilla bean for a little extra depth. I have infused rye and after a few weeks it tastes like rye whisky. Not as good as the expensive stuff but very drinkable. Try it out and report back here. It's fun. I have satisfied some of the guys at my whisky tasting group with my infusions. I have less than $10 a .750 l invested. And it's fun.
