Stop in for a cup of coffee

Get the off idle worked out first.
First find out how much transfer slot is showing at hot idle. That will be clue number one.
If its out of range, then adjust timing or whatever is needed. Obviously not going to drill holes in a borrowed carb.

Once everything is hot, get in the garage or shade and under the hood.
Manually open the throttles very slowly. If there's a hesitation then its in the idle circuit.
Take it for a drive and very slowly open the throttle from a dead stop. Same deal, any hesitation or flatness and its the idle circuit.
Simplest reversible test is stick some wires into each of the primary air bleeds. IIRC 3310-3 had .076" primary air bleeds. Stick a wire in each with enough diameter to reduce the area to the equivalent of .073"

if you don;t have piano wire or such, strip some stranded lectrical wires.
In any case, stick it in the air bleed, run it up over the choke horn and down under the air cleaner gasket.

I do think it is in the accelerator pump set up and/or squirter. Slowly accelerating, either in park and reving or driving, it works great. It is only when stabbing the throttle is there a bog/hesitation. That bog/hesitation happens both idling hot and when driving. Stab to WOT and it may die or hesitate, then goes like a bat out of hell. When I attempted a burnout last night with this carb, it died the first time that I abruptly went to WOT. The second time, it hesitated, then lit them up wonderfully. This tells me accelerator pump isn't sending enough fuel until the booster can pick up fuel naturally. So, my thought is not enough fuel or not a long enough shot of fuel to cover that transition.

As for the borrowed carb, I bought it used and rebuilt it for my son's car and it worked well on my rat rod so it was the easiest to try. I do also have a 750 Edelbrock I could try but I don't see where that will help.

FYI, running around the neighborhood with open headers and doing burnouts in the driveway hasn't gotten me any ill views from the neighbors..........yet.
