How long do you smoke it? I have a smoke tube that I put chips in. It will last an hour then you need to refill. Great for cold smoking fish and cheese.
I would have liked to smoke it for like 6 hours, but, then you have to take into account that I place a wet rag over the outlet of the cabinet to keep the smoke in, and I heat the wood for like 10-15 minutes, and turn it off for like 30-45 minutes. Just to keep it cool. Because since I do not have the hose between the smoker and the cabinet. It is a Bradley smoker, and I am very happy with it, just that for cold smoking the food get half cooked even on the lowest smoking with the heater in the cabinet off. Unfortunately it started tiny drizzle changed to rain so I had to stop it and take it in after about 4 hours. But, the fish tastes yummy. It will definitely both be eaten and enjoyed. So much cheaper to smoke it myself than buy smoked salmon in the stores. In some days maybe I will smoke some cod too. The smoked salmon is not for dinner, it is for "cold cut" on my open face sandwich. The cod on the other hand, that will also be cold smoked, but then poached and eaten warm for dinner with tators and mashed rutabaga and small pieces of bacon.
