Looks nice! Glad to see the progress! I always ran the cheapo headers. I tried the Doug's a few months back, but the fitment wasn't really any better, so I resold them.

Dang! I am bringing out the sledge tomorrow, been holding off on doing the needed and putting up with vibration and rattles near torsion bar and gearbox interference due to me not wanting to reduced cross sections on my headers. Will just need to be about 1/4" on a couple of pipes, thanks for posting this.
 
Now looking at it in the morning light, it doesn't look so bad...
I ordered that thicker biscuit from Summit. ...

I think it will work out fine.....without hammering on the headers!

Keep in mind that as you shim the engine up, you have more side to side movement due to the slotted motor mounts on the k-member. So, you could try shimming the DS 1/4" or so then moving the engine to the PS to level it out.
 
I think shimming on the drivers side will just drive the #7 pipe into the steering worse.
shimming the passenger side will allow the drivers side to drop down the slope of the mount to the end of the slot, and maybe gain you some clearance, but it will be minuscule and somewhat tricky.And then you get to deal with the off-level carburetor.
I would loosen the bolts on all the engine brackets and let everything settle to the bottom, then retighten. You might have done that, if you bolted them on with the engine upside-down.
And then I would pull the column and modify that to fit. The usual fix there is to shorten the outer sleeve at the lower end. If the coupler hits the pipe you can replace it with a U-joint.

But above all, like others have said; you gotta insulate the pressure hose from the header. If it ruptures due to heat, you will have a fire there right away.

I thought Dougs were supposed to be the final word on A-body headers?Perfect fit and all that?

I am experiencing the same issue with #7 tube hitting that steering sleeve. Is there anything to be careful of when ' trimming' that sleeve ? How much can you trim off of it ?

I actually ended up modifying the header....used a nice heavy piece of pipe against the header and put the hammer to it....that put a nice smooth radiused clearance on the header.
Looks clean...almost like it came that way.

Headers are coated. Singing them will flake off the coating ?
If trimming that collar is possible , I would like to go that route
