Treblig's doughnut?

"Good" exhaust guy told you to get lost? Time to up your standards and find a better guy. The "doughnut" is the raw bend you buy to make your initial bend out of. You cut the section you need, weld it to an exhaust flange, and run other pipe and bends to get the headpipe where you need it. Not all exhaust shops are capable of making a tight enough bend themselves, but they can get the parts to make it just the same as we can, if they are willing. Good shops usually are- unfortunately they're getting harder to find. Hit up members of your local car clubs to see who they use locally... that's usually your best resource.
