You can data log just about anything. I would look at the plugs and see if it's running lean or if you have info from the O2 sensors. That will tell you. 8AN necked down to 6AN would still give you a pretty good restriction. Pressure might be good but that's for the injectors to run right. What the engine needs is fuel volume at the right pressure.
