You can also see if Summit has a factory second or reconditioned one. They're usually cheaper and come with the same warranties and whatnot. I'm a big believer in ordering from Summit as their customer service is second to none...
If you don't like the fiddle with the carburetor the secondary door is set and waited on the Edelbrock 1406... just another thing you won't have to fiddle with...
Now Rusty rat Rod 318 will run and myself would prefer the street demon or the AVS if given the choice between the three because we like to fiddle with our carburetors and try to make them better. I'm sure if 318 will run had a choice he would have a Holly anyways so it does get into preferences. But you pretty much stated you didn't want to fiddle with nothing or as little as possible...
I wouldn't doubt that you would read the instructions and do just a little bit of tuning for your specific application. But it will be mostly just the two simple screws on the front... Make sure you hook a wire that comes on when the ignition comes on having 12 full volts to the choke and you'll be off and running...
