Let’s say your vinyl roof was in very good condition. But several inches of the rear pillar, where it meets the quarter panels has bubbles under the vinyl there. Right behind the rear windows on a 2 door car. How involved or difficult would it be to peal this vinyl back and fix that area ? I realize there might be rust there. But it looks very doable, even for a amateur ? What kind of adhesive is used ?

Heat gun and steady pressure. You got nothing to loose, its gotta come off to fix that rust.

When I built my dart, I put a new top on myself. I stripped a painted the entire car. I use 3M spray trim adhesive to glue the new top on. It was 14 years ago and still looks new. You can find instructions on the web

I put one on my notch. I used barge contact cement in a harbor garbage spray gun. I had a few bubbles near the drip rail.
This is the FSM method to fix bubbles

My vinyl top cost $1500 to install with putting on new front seat covers. There were only two people in my area that still do them. Spendy but he did a great job.
