How to remove headlight and wiper switch without breaking them?

The headlight switch has a release button underneath on the bottom that you can feel if you reach back there. You pull the switch out, then push the button / release, and then pull it the rest of the way out. After that there is a threaded nut you will see on the front. A very careful screwdriver can remove it. Or build a tool for it. The wiper knob just pulls off I think, and then has a nut on front as well.
 
Wiper depends on year. My 67 has set screw on the wiper knob. All headlight switches pull the shaft and knob out as an assembly as described above

I've sometimes had good luck using two small screwdrivers in slots 180° apart and turning the retaining nut off...
 
All good advice but I will add on to it. Remember that the headlites will be fully on once you pull out and release the knob/stem part, so either gently push (stem) back in until 'click, click' the headlites and parklites shut off - as it would take a harder push to re-engage the stem tip, or better yet, remove neg. battery cable.
One other way to try to remove the round retaining nut is to use suitable needle-nose pliers, with one pointed tip in each opposing slot. Push in gently to keep the tips engaged and then carefully turn 'lefty loosey'. :)
 
The switch bodies have small square bosses that prevent their rotating in the hole. There is usually a little bit of free space in the fitment. Reach under and twist the switch clockwise and counter clockwise helps loosen the bezel nut.
 
Just make sure you disconnect the battery first before doing anything in the dash.
 
just to make sure since this is new to the OP - the chrome bezel IS the nut you are trying to remove
