...has finally arrived. Night time temps are forecast to be in the 20's-low 30's. So if any of my "regular customers" are in need, or wanting some smoked cheese please do let me know. Hell...even if you are an "irregular customer" let me know if I can become your dealer.

All cheese matters! The smoked stuff is excellent, I started doing this a couple of years ago when I got my Traeger. I may have to fire up a batch later today...

I try to buy all the cheese from a local restaurant supply chain, Smart & Final simply because of the price. Most of the blocks are 5 pounders, but if that is to much I can always go to Costco etc. While 5 pounds may sound like a most people go thru it pretty quick. A local guy gets 10 pounds a month during the winter. Soon as he sees the weather change he asks for 40 pounds so he can get thru the summer lol...All I ask is that I get my money back plus a buck or 2 to cover the vacuum sealing bags. Pepper/Colby/Monterey jacks, pretty much all the cheddars (you don't want white, it is way to dry and cold smoking makes it worse). So just let me know what kind of cheese you like and I will let you know how much it is. Our favorites are Pepper/Colby & Monterey jack. If you would just like a portion of the 5 pound block of each that won't be a problem...I try to be as flexible as I can...

I'd like a half block of monterey jack and a half block of cheddar.
 
Have not checked my messages yet, I will shortly. I need to order some new smoking mats and pick up a bag of pellets. I use cookie cooling racks in the smoker. I need ones with legs under them so I can stack them. They are a bit hard to find, and when I do they are stupidly expensive for what they are. The finish on them is really crappy, after every smoking session I was them. After 6-8 washes the finish is gone...and they start to rust. So I buy these smoking mats so that the cheese never touches the racks.....

How do you smoke your cheese? I have to do mine on the Traeger by putting the cheese on top of toothpicks (for air flow under) inside a disposable bread pan, then put the bread pan inside a larger lasagna pan filled with ice. I go in after an hour, dump out the melted ice, turn the cheese over, add new ice, and then smoke another hour. The mats you linked above look interesting, but I'm wondering if the end result will be a lake of melted cheese inside my smoker?

I just bought a RecTeq 700 and they have a cold smoke box. Maybe traeger has something similar?
 
Doug, check the local Army/Navy surplus house, if you have one close by. They usually have a good selection of stainless stuff used by the military in the kitchen areas. As far as spacing for the racks goes, try ceramic spacers, I've gotten them in everything from 1" thick to 4" thick that the wife uses for ornaments she has to bake.
 
Have not forgotten about this....I am limited to lifting 5 pounds for another 3 or so weeks...and I am waiting on a few things I ordered to show up...
 
Just wanted to give those of you waiting on me an update of sorts. Doc didn't want me lifting over 5 pounds so I have not been doing much. Wife was rearranging the freezer and noticed some of the meat we sealed had lost the vacuum. We push our vacuum sealer pretty hard. The teflon tape over the heating element that seals the bags developed a bunch of lumps in it, guessing that is why the bags are losing the vacuum. Ordered a roll of Teflon tape from Amazon, tracking says it will be here next Tuesday....hopefully I will be smoking cheese shortly.
 
I glanced at the thread title and thought it said "Chinese smoking season". LMAO

For those waiting on my lazy arse to smoke cheese....I'm trying to get caught up on a friends "order"....20 pounds of butter and 40 pounds of cheese....I will be in touch shortly....

Yes Sir...I will be calling them today about getting some x-rays done. Therapist is convinced that I have a short left leg. I have sole lifts in most of my shoes....now I have quite a bit more pain then I did prior to having the lifts installed. Granted...I spent 50+ years with this short leg and have only been wearing the modified shoes for 12-14 days so.....
I will be in touch with you shortly about prices and what not. Sadly the price of cheese has went up....a lot. 5 pounds of Pepper Jack was a tick or two over $13...the block I bought last week was $21.
Got to pack up the chocolate chip cookies, made with smoked butter, to ship to a buddy in Idaho....talk with you soon....
