All those sharp lines showing your passes with the burr wouldn't be visible if you were using paper rolls ;)
Slow the burr down if it catches and jumps. High speed is nice for taking small bites, but it can get farther out of control and more quickly.
Pushing harder will make it jump more, but a firmer grip can prevent it jumping as far.. Catch 22.
Burrs are made to cut a certain depth with each pass of the edge, especially carbide. That depth is the "bite" that will try and make the cutter jump. Finer burrs help reduce the bite and jumps. This is why I almost always went back to paper rolls and stones - they're easier to control. Fine burrs are nice to have though.
