Oh, okay jerky, never had it. Sons girlfriend is from there, had to leave school here, covid. We hope to visit her and family, she says we'll have a braai (bbq) They like their meat!
So normal jerky is dehydrated or smoked or bakes. Bitong is done via dying in the sun and moving air. Bitong is lean meat, with all the fat trimmed off. Jerky is left with fat on it or in it. Bitong is all dry spiced, basically cured like Ham in the old days. It’s supposedly healthier and has less sodium and stuff than jerky.
