So I am in the middle of a dash wiring project. I bought a roll of the non-adhesive black tape to wrap long runs of multiple wires. How best to secure the ends once you are done? What did the factory do?

The factory (I believe) used a tape that is really thin and seems to be somewhat adhesive.
Then there’s what’s called friction tape (My favorite) because it is actually a coated cloth like makeup and adhesive.
For most any tape I like to end it with a small zip tie to keep ends from unwrapping.

If it's the same type of linerless tape I use, just stretch it to its' max and then wrap it tight while stretching. When this is done correctly you won't be able to remove it without a razor blade. If yours will not stretch then I can't help???

I cut the end after the wires are wrapped, then heat the cut end with a heat gun. While it's still hot, I press it down against itself. It does not unwrap itself after that.

you can also stretch the end a bit and tie a half hitch in it. then tuck the tail in between the wires. if it's orientated correctly the tail will disappear under the wiring

I use this method by pulling out a strip of tape and stretch it as I roll it back on the roll.
This way when it gets put on it tightens.

When I wired my 68 Barracuda, I would use a piece of con volute tubing or heat shrink on the very end where the tape ends.
