Gas pedal assembly

if you just bend the pedal higher then the carb will be at full throttle before the pedal reaches the carpet. the problem there is when you mash the throttle you're stretching the cable and it will either break or bend the carb linkage. if you feel comfortable with the pedal higher you'll need to make a stop under the pedal to keep that from happening while still allowing full travel at the carb. either a block/bracket on the floor or something attached to the underside of the pedal itself.

ps my 68 valiant also has a big height difference, enough to slide my foot under the brake from the throttle so i'd say that's how they are too.
