Restoring a 340 need advice

What is the intended use for the car? A nice quick street car requiring very little maintenance that you can drive anywhere? No need for a roller as stated above. I don’t like hydr lifters. If I’m putting a new cam in it I’m springing for adjustable rockers and solid flat tappet. The maintenance for a solid is over stated. Once they settle in, check them once a year. Like getting a physical. You can easily get that car in the low 12’s with that intake and some stock 340 exhaust manifolds. Heads are going to be the bottle neck. Other than the 318 exhaust manifolds you have. My point, will roller/headers make more power? Sure, I run 11.80’s at 116 with stock 340 exhaust manifolds and a stock 68-69 340 intake manifold with the dividers cut down. Using a solid flat tappet. How? Head flow and the car is well sorted. How much to you really want to scare mom?
