That car is really turning out nice. On the carburetor.....that's the same one I have on my slant. I have a lot more motor than you, BUT they are VERY adjustable. I am 100% certain you can tune it just fine for your motor. It has replaceable idle fuel bleeds in the metering block, and replaceable air bleeds in the air horn. You can tune that rascal to the Nth degree.

Thanks! Yeah the carb has been great so far. Almost ran perfect out of the box but with a little tweaking gave it a nice throttle response. I almost went with an Edelbrock 500cfm but glad I went with the Quickfuel one.
