I was "Johnny on the spot" last week when Corsair posted on Facebook that they had a few of these bottles available. It's a pot distilled single barrel at 105 proof. I like Corsair and what they do. I toured their distillery while I was in Nashville a month or so ago and for a small craft distillery they got it goin'. They use malted rye and chocolate rye in the mash bill so it converts itself to fermentable sugars without using regular malted barley. (bourbons are usually corn, rye or wheat, and malted barley) The rye spice is mild and gives it a cereal grain taste and the chocolate is subtle but you can taste it from the first of the sip to 5 min. after. No burn just a gentle warming and the black pepper sensation you get with a rye. It is fun and different but a smooth sipper. THe age statement is just 2 years but they maturate in small barrels so it is equal to a 4 year Rye or so. Good thing I bought 2 bottles. Cheers
