Is the 383 a better engine, or does the 440 just have more displacement?

No piston speed or compression or bore size with a 383--makes for a Dudly combo. Put a longer stroke crank in it if you just gotta use a 383 block--otherwise use a 400 block for the greater selection of 4.375" pistons. J.Rob
