Yes, the 10.95" kit is what you would need to order. Unless you decided to go with 15" rims, in which case you could run the 11.75" stage II kit if you wanted. With the 73+ kit and going from drums to disks you're going to need a lot of stuff, the tapered adaptors, lower ball joints, new master cylinder (disk/drum) and a proportioning/combination valve. So with everything you need it would look like this...

Keep in mind though that even with the other conversion kits you'd still need the new master cylinder and combination valve, new hoses, etc. And unless you keep the 9" spindles you'll need spindles.
Thank you so much for helping me out on this i really appreciate it! Now one more thing if i get that 10.95 doctor diff kit i think i might just change the front to a 5x4.5 simply because there is a better rim selection. Can you still use the stock hubcaps with some aftermarket rims or no?
