Yep. Most are Roma and make good Pico. I canned up 7 pints of salsa a few days ago. It is pretty tasty but a lot of work.

We have been experimenting with canning pico for a couple of years now. We have really not established a good way to keep the heat. When we open a new jar we just add some fresh jalapeƱos and it is better. But man it is a lot of chopping. I have tried food processors etc but in the end I like hand chopped the best.
