A snap lock disk or what I like is a flat honing stone for a knife about 6" long.

No gaskets were used on exhaust manifolds, just the heat shields when needed.
The surfaces are flat and seal metal to metal.
I've lapped exhaust manifolds but never heads. That would take a big surface - like a granite block made for lapping - and some skill and expeirence so as to not do the edges more than the middle.
