Thank you again for that awesome message, by far has been the most detailed answer that has helped me so much.
I spent the morning calling custom wheel places and the 63 series in big bolt pattern 15x7 4.5 BS even with custom wheel guys is hard to find lol.

My other option was going to be a 235/60/15 on the 15 x 7 4" BS rims I have access too. Do you think that would work and also allow the car to sit at stock height with the wheel nice and snug into my wheel well ?

The problem is a 15x7” with a 4” backspace also has a 4” front space. The 235/60/15” is 9.5” wide on the section, so you’ll have .75” of tire overhanging the rim. So you’re up to 4.75” out of your ~5” from WMS to quarter lip, or down to about 1/4” of clearance from the widest part of the tire to the quarter.

It won’t rub sitting still, but I’ve found that for most street driving situations you probably need more like a 1/2” to the quarter lip if you don’t want any rubbing at all. Less than that means you’ll probably get some occasional rubbing. But of course that depends on how you’re driving the car, where you’re driving the car, how often you put people or stuff in the backseat etc. For my car I want to be able to go to Costco and load my trunk full and then drive a mountain road home and not worry about my tires rubbing. But that’s a higher standard than someone that just putts down to the Dairy Queen once or twice a month when the weather is nice needs.

It's a shame Stockton Wheel is out. They could make anything you want.
