now i thought the plate under an iron inlet was to keep the exhaust crossover heat from burning the oil in the valley? when I've taken them off there's a buildup of carbon (burnt oil) under neath.

I'm sure there is truth to that.....but I usually block the heat crossover in my neck of woods anyways. If I run manifolds, I look for some without the flap.
Saying all that and back to the baffle.....being over the cam tunnel holes it would be blocking the oil splash from the cam from getting up there....right?
