Looks awesome, how do you prepare it?
Split the squash... scoop the seeds and put the halves "face down" in a baking dish with about 1/2" to 1" of water in it. Bake at 350° F until the skin is soft.
Meanwhile...
Finely dice veggies... onion, garlic, peppers mushrooms in this case.
Sauté the garlic and onion in olive oil.
Add peppers and cook until soft. I added about a tablespoon of butter and season to taste. Once the veggies are done, set them aside in a bowl.
Cook ground hamburger or pork (seasoned to taste) until medium- rare. Add the veggie mix back into the pan
Squash should be about done at this point
Take the squash out. Remove from the baking dish and dump any remaining water.
Use a fork or spoon to mash the squash without damaging the skin. You want the skin as a bowl. Push it to the sides in the skin forming a pocket
Put the squash back into the baking dish
Scoop in the meat and veggie mix... grate some cheese over the top and put back into the oven until the cheese melts
I sprinkle a little smoked paprika on top.
Kinda cool when you have people over as you can do a bunch at a time... or if just one, it's real simple leftover the next day.
