had you considered stacking 2 valve cover gaskets for the little extra clearance you need? just superglue them together and then to the valve cover so they stay in line for a leak free fit.

That is sure a reasonable solution, but I like the fuss free welding approach. My welding will not get nasty, ripped torn or mis-shaped on the side of the road when adjusting the valve lash. The double gaskets might.
