I did this same swap and for the same reasons.
My well-tuned car would only pull to about 4700-4800 rpm's Wide Open with the 2Bbl and Single Exhaust.
I switched to Dual 2" Exhaust and a 500Cfm 4Bbl Carb. It maybe gained 5 Horsepower honestly. But!
It will pull all the way to the end of my tachometer now and gets about the same mileage.
I call it Smiles Per Hour and my seat-of-the-pants Dyno says It was well worth it!
