A six quart pan?
Then six quarts in the pan, another quart or so (depending on the size filter you're running) for the filter and galleries...
Some people like to run it a quart down in a well-baffled pan to help reduce windage, but that's your call.
The weight and type of oil you run is entirely dependent on the clearances you are running in the engine.
