E/Stock or F/Stock

I am looking to build my 68 Barracuda Coupe with a 383 4 speed to race in either E/Stock or F/Stock. From what I can tell my car falls into the E/Stock class, I think. Anyway, what I am wondering is, does anyone else run in the Stock classes?
I am looking for a "blueprint" on how to build the car itself, I have an engine builder who will help me with the engine side of things I just wanted to know if anyone has any websites that give guidelines for the do's and don'ts of building the car itself. I am a tech inspector at our local drag strip and have read through the rule book and understand what they require but I am not familar with the reading between the lines, if you know what I mean. Our track is run as ET handicapped racing so there are no Stock or Super Stock racers around here for me to ask these questions.
