225 slant six vs 318?

Go with the 318. Very reliable and strong. Can make decent power without getting crazy on cam/compresion combos.

Where are you located. I have a 318/904 from '79 sitting collecting dust in my garage.
I have a '74 Duster. I'm doing the same thing only it'll be a 360/727 combo.
