it really depends. what's your budget? are you building your car as a driver or is there a specific goal or intended driving purpose-- ie. a burger cruiser is gonna be okay with entry level brakes where as a car set up for road racing will need something a little more robust.

73~76 is flat on the ends
67~72 the ends are perpendicular
64~66 the ends are perpendicular but the idler/pitman are at a slight angle and the drop is quite pronounced, it is also much narrower.
here's a 73~76:
anything over 340 (870 bars) you're going to want good shocks.
anything .990 and up you're going to want really good shocks.
t-bar size selection is based on a bunch of parameters but it basically comes down to: how you want your car to handle, what level of harshness in ride you find...
