does anybody know the max valve lift you can get away with on 1970 340(forged stock replacement pistons)?

There is no specific limit. It will have to be measured as there are far too many variables.
normally it is not the max lift that cause problems...since at max lift the piston is nowhere tdc...
alot of duration and how fast the cam opens causes more problems...
the valve to piston clearenace needs to checked during the overlap period where the exhaust valve is closing and the intake is opening...that is where your problems are..
