360/408 Stroker best gaskets?

Looking to see what preference brand gaskets you guys/gals prefer in your build. I have a street / strip car 10:1 nothing crazy but looking to freshin things up.
 
I tend to piecemeal things out to get specific gaskets I want, mainly head, valve cover, and oil pan, anything else I just use the typical felpro kit. Unfortunately there kit usually includes a .055 thick head gasket, too much for a good quench on most builds.
Although I do tend to lean towards using their 1008 head gasket even with the 4.180 bore size. I recently read a Pittsburgh racer post saying a larger bore head gasket gives the porter more room to work the chambers.
Anyway, mahle is a good brand at a reasonable price, and top of the line cometic at over $200, but I have never used their complete kit.
I am not sure if it is true, but I follow the myth about synthetic oils leaking through cork gaskets and tend to buy the metal backed rubber for valve covers and oil pans.
Of course, only using synthetic oils on roller engines.
