how hard is it to install a headliner? is it possible to change to one of those ABS one piece headliners?

Yes, I did it in my last car. Much nicer end product. I wrapped mine in modern headliner material and the install was beyond easy.

I got mine out of a donor car but I'm certain they can be bought from a restoration company.

73 and newer is ABS. Mine came out of a 74 dart. They all fit in the darts.

So when ordering I would want to order for a 73-6 swinger right not a sport?

If you do decide to stay with the cloth headliner its very doable but its not a fun job. My son and I just replaced his in a 70 Dart over the weekend. Took the better part of a day for us and we're not experts on this by far. Its not hard but you will be sore! if you decide to go for it I'll be glad to give you any tips to help.
