Fender lip roll up

....... I know how but the risk of something going wrong is fairly high.

I would really think this through first. Can you get a wheel with a more correct offset? Do you really need something that wide?

How good is the body and paint? Do you know if their is filler above the wheel opening? It could crack or pop out.

You could trim the inner lip instead of rolling.
 
You'll need to make a series of cuts as deep as the extra width needed. then bend each section between each cut. the problem is that there are 2 layers welded together and essentially, 1 needs to get longer while the other gets shorter. this will cause buckling. the other(preferred by some) option is to cut & re-weld. Seal prime & paint either way. A pro body man will probably have better advice.
