First question.

Is it all still the stock components? i.e fuel sender, gauge, etc..

Ok.

If it has suddenly started acting funny make sure you have all good connections. The system is like a giant ohm meter... so loose connections cause havoc. Is the other gauges working correctly? Another possibility is that gunk has developed under your sending unit arm and will not let the arm send proper information to the gauge. If the arm will not go all the on empty is a good indication that is what is happening.
