Does a 340 block with 360 heads require a special intake manifold? Just wondering if the "V" created by this combo will allow for a standard intake.

273,318,340,360 are all the same. The "V" doesn't change.
The 340 & 360 heads and intakes are completely interchangeable...

Well, uh,..........ahem!!
The earlier (64-5) 273's have different angles, and "it might be" on the later ones that some combos will leak at the ports, like, maybe, into the valley, etc, such as a "big" 340 intake on small 273 ports.
