Any documentation/reference sheet out there to determine what 360 I have here?

For model year you should look for the partial VIN stamp along the pan rail. It will look something like this

That's a 79 model.
 
What is correct radiator for that block? Currently it has a 2785970 18398, which I believe is the 225 and 273 radiator.
 
Slant 6's and V8's don't use the same radiator. That number is correct for a '67 model with a 273 and is a heavy duty version.....probably a 3 row.

Pic of the front of your engine, please.
It APPEARS, from your pic, that you may have the late aluminum water pump with the passenger side inlet. If so, it won't work with that radiator, because it has a driver's side lower outlet.

Flow and cooling capacity should be fine. If the hose connection locations are stock, just use the earlier cast iron water pump, pulleys, and brackets, or you'll need to move the hose connections to use the '70-up pump, pulleys, and brackets.
