I use old body panels I have laying around. I can usually find something close to the right shape and don't have to monkey with it as much. Using the same thickness metal also makes welding easier (less chance of burn through, or panel growth).
I've been using 18 gauge for patches. Pretty good match to the old panels. If its new metal you are using make sure to scuff it good or wipe it down good. It has oils on it and the weld wont stick.
